I have a well-documented aversion to breakfast foods, which means that I’m always on the look-out for good breakfast recipes. Enter Akuri eggs. Flavorful. Spicy. And oh so simple. I found this recipe on Hitha On the Go. It takes about 10 minutes, and the best part is you can really use whatever spices you have around. I hope you enjoy.

Akuri- Indian Style Eggs

Ingredients:
- 3 Eggs
- 2 Tablespoons of Milk
- 1/2 Jalapeño
- 1/2 small white onion, minced
- 1 garlic clove
- 1 teaspoon ginger, minced
- Salt & Pepper
- 1/2 teaspoon turmeric
- 1/2 teaspoon paprika
- 1/2 teaspoon cumin
- 1 tablespoon ghee
- Cilantro, chopped
- Toast
Tools:
- Small bowl
- Whisk
- Small pan
- Wooden spoon
Steps:
- Whisk eggs with milk until fluffy. Add all spices and whisk until combined.
- In a small pan, melt ghee over medium heat.
- Add onion, ginger, and jalapeño until fragrant
- Bring heat to the lowest setting.
- Add egg mixture
- Continuously stir with a wooden spoon.
- Plate eggs and sprinkle with cilantro
