Wow, I’m blown away by the number of views of this recipe. This is one of our go-to summer recipes. This Cilantro Lime and Jalapeño dressing has incredible flavor and only requires a handful of ingredients. It’s a fresh, tangy and has just the right amount of spice to elevate any salad.
Cilantro, Lime & Jalapeño Vinaigrette
This Cilantro Lime and Jalapeño dressing has incredible flavor and only requires a handful of ingredients. It’s a fresh, tangy and has just the right amount of spice to elevate any salad.
- 3 medium Limes or Lemons (yields about 2.5 teaspoons)
- ¼ cup Cilantro Leaves
- 1 medium Medium size jalapeño
- ¼ cup of neutral oil if possible (like avocado or grapeseed, otherwise the most neutral olive oil you have)
- ¼ teaspoon ground cumin
- ½ teaspoon kosher salt
- ½ teaspoon Freshly ground black pepper
- Lightly dry roast the ground cumin in a pan (optional)
- Finely chop the cilantro leaves and stems.
- Juice the lime or lemons into separate bowl. I recommend leaving one half of the citrus aside for last minute squeeze.
Combine ingredients:
Option 1: In a mixing bowl, add the neutral oil, ground cumin, salt and pepper. Use a whisk or spoon to aggressively combine. Then add the cilantro, jalapeño, and lime juice.
Option 2: Combine the ingredients in a high-power blender. Puree or pulse ingredients together until the mixture comes together and the cilantro is still finely chopped.
- Set aside in small container with lid, and shake before serving.
Tips:
- You can make this vinaigrette up to 3 days in advance.
- The color may change slightly. Add an extra squeeze of the acid (lime or lemon) before serving.
- Shake before serving
How to Use:
- Marinade for roasted veggies or grilled seafood
- Drizzle on a fresh avocado
- Toss into a salad or grain bowl.
