I have to share with you the most incredible granola I’ve ever tasted. It’s absolutely amazing! I’ve made it twice in the past week, and each time it vanished within a day. Back in 2017, the New York Times unveiled Eleven Madison Park’s famous granola recipe.. This renowned Michelin-starred restaurant gives each guest a jar of this granola for breakfast the next day. Trust me, this recipe is foolproof and incredibly easy. All you need is an oven. Just mix oats and nuts in a bowl, coat them with a sweet and tangy sauce (thanks to the olive oil), and bake for 30 minutes. The aroma while it’s baking is irresistible, and you’ll find it nearly impossible not to sneak a taste straight out of the oven. Eleven Madison Park Granola Adaptation
This is an adaptation of Eleven Madison Park's famous Granola, presented as a gift for the next days breakfast. This is the perfect, most addictive granola our family has tasted, and rarely lasted for more than a night in our house.
- 3 cups rolled oats
- 1 cup shelled pistachios
- 1 cup unsweeten coconut chips
- 1 cup unsalted pumpkin seeds
- 1 cup walnuts
- 1 tbsp Diamond Kosher salt (*must be Diamond Kosher, or you'll need to adjust your salt ratio)
- 1/3 cup light brown sugar
- 1/3 cup maple syrup
- 1/3 cup extra virgin olive oil
- 1 cup sour cherries or cranberries
- 1/4 cup chocolate chips
Preheat Oven to 300°F
In large bowl, mix together oats & nuts.
In small saucepan, combine sugar, syrup and olive oil over low heat. Wait till sugar has just dissolved.
Fold sweet liquid into the mixture of oats, making sure to coat all the dry ingredients.
Line baking sheet with parchment paper and spread granola over it.
Sprinkle salt (to taste) over the granola.
Bake in oven for 35 to 40 minutes, until dyr and lightly golden.
Remove granola when cool from tray and combine with dried fruit and chocolate (optional).
The best part of this recipe is you can truly substitute each element. I’ve made this hatless, with some nuts, all the nuts. The basic ingredient is: salt + sweet + nuts.
